Guide to Fresh Pasta

Tender, delicious and easy to do! Fresh pasta can make such a big difference. It's very simple to make and requires so few ingredients! Definitely worth a try.

Ingredients
  

  • 200 g Plain Flour
  • 2 Eggs Medium

Equipment

  • 1 Pasta Machine Rolling pin if not.

Method
 

  1. Pour your flour into a pile and make a well in the middle.
  2. Beat your eggs and pour them into the well.
  3. Mix the eggs in the middle, slowly bringing in flour from the edges.
  4. Once the egg mixture has thickened, cut in the remaining flour and make a shaggy mix.
  5. Knead by had for 3-5 minutes to bring together into a uniform dough.
  6. Cut the ball into quarters and press into circles. Roll through the pasta machine until 5mm thick. Roll the edges over to give square edges.
  7. Put it back through the roller and roll until it is 2-3mm thick.
  8. Cut into strips or any other shape you want.
  9. Add to salted, boiling water and cook for 2-3 minutes until it starts to float to the surface. Strain and serve with your favourite sauce!
